Description
This is my first attempt at making wine from real juice (along with a cabernet sauvignon). Primary fermentation went very quickly. One month on oak seemed to give a good amount of flavor. A relatively small amount of tannins were added.
Discussion
This wine was allowed to age a long time before bottling. Metabisulphite was added leading to a final value of 70 ppm. Early tastes suggest a good quality wine. It is drinking well.
